Nasi Ayam Pacak Melaka
What do you call a chicken that has been cooked through a five-step process? It is called ‘ayam pacak’. This is a secret family recipe of the owners, originating from Batawi, Indonesia, and it has been passed down from generations.
Restoran Cahaya Utama, which is the only restaurant that serves this special chicken pacak, was opened for business since February, 2013.
The chicken pacak that we had went through a five-step cooking process. The process of ‘pacak’ means to first poke the meat to make it more tender. Then it is marinated with nine types of herbs. After the herbs have been fully absorbed, the meat is then roasted, followed by steamed and finally, fried. Phew!
The restaurant’s signature dish is its ‘ayam pacak’ but the management has plans to serve other meat pacak dishes, including lamb pacak and beef pacak.
By the end of the year, the owners plan to open four other restaurants in Melaka and further expand to Kuala Lumpur and Ipoh next year. This certainly gives the opportunity to foodie lovers outside of Melaka a chance to try out the pacak meat dish.
