How to Make Apam Gula Hangus
Apam Gula Hangus was my childhood snack, except that I used to buy them from Chinese or Nyonya stalls. So, I was quite surprised that it is an equally popular Malay kuih.
The delegation of Eat.Travel.Write Selangor International Culinary Adventure 3.0 was in Hulu Selangor last month.
There, we had the opportunity to check out a demonstration on the making of Apam Gula Hangus by Pn. Hamidah bt. Adom, an entrepreneur who bakes many different types of kuih-muih. Apam Gula Hangus is just one of them.
First of all, prepare the burnt sugar syrup and leave it to cool. As for the batter, it is a mixture of flour and sugar. Beat it for twenty minutes. Add wheat flour into the batter with baking soda and sodium bicarbonate.
Add the burnt sugar syrup and as you stir it in, add oil. Scoop the batter into individual cups and put them in the steamer for twenty minutes.
Pn. Hamidah’s Apam Gula Hangus is very popular among the locals and she makes some 1,000 pieces daily, according to orders received.
