Chocolate-Making Demonstration
NS Galleria Chocolate World is just opposite the Muzium Negeri Taman Seni Budaya and as my friends and I were already headed that way, we dropped by the chocolate speciality store and were treated to a rare chocolate making demonstration by the proprietress, Siti Noraizah Kassim.
With the aim of producing quality chocolates at reasonable prices, Siti sources for the best cocoa powder to make her 100% cocoa butter fresh chocolates, as opposed to using vegetable fat.
Supported by the Malaysian Cocoa Board, Siti’s store produces half a ton of chocolates per month, a large quantity to fulfil custom orders from clients. According to Siti, 70% of Malaysians still prefer milk chocolate.
Seeing how Siti produces her chocolates, it looks like child’s play. However, even with the best ingredients, I guess most of us are unable to match Siti’s quality in our chocolates because we do not have her specially tweaked chiller. Boo!
Only in business for about a year now, Siti markets her halal chocolates under the brand name Chocs Valley. Besides catering to walk-in customers at her store, she also handles orders via her Facebook page.
In addition to retailing in her own brand, Siti produces OEM chocolates under different brands. Some of her chocolates are exported as well.
By the way, the Malaysian Cocoa Board’s vision is to be one of the world’s biggest producers of quality cocoa products by 2020, in a statement issued three months ago by Plantation Industries and Commodities Minister Datuk Amar Douglas Uggah Embas.
